Chipotle Peanut Satay Sauce

INGREDIENTS
2 tablespoon coconut oil
1 small onion, finely chopped
4 cloves garlic, finely chopped
1-2 Thai red or jalapeno chilis, finely chopped
1 large lime, juiced
1 bunch cilantro, chopped
18 oz coconut milk
¼ cup soy sauce
2 teaspoons ground coriander
2 teaspoons ground cumin
1 teaspoon ginger, finely chopped
1 jar Handsome Carver’s chipotle Peanut Butter
DIRECTIONS
Heat coconut oil in pan, add onion, garlic, chili and ginger and sauté over medium heat for 5-6 minutes.
Add coconut milk, soy sauce, lime juice, coriander and cumin and sauté for 2 minutes. Add Handsome Carver’s Chipotle Peanut Butter and lower the heat to a simmer. Be sure to thoroughly blend the sauce, and make sure to stand back from the stove—several people have been injured in the rush of hungry diners.
Take sauce off heat and sprinkle with cilantro.

Handsome Carver’s personal favorite out of all of his creations. This is savory peanut butter, which means you can use it in many ways you are used to using peanut butter, like on crackers or toast. But you can also use it in ways you may not be used to, like mixing into stir fries, as a base for a peanut sauce, or on sandwiches.
