Handsome Carver's Spring Rolls with Peanut Dipping Sauce

SPRING ROLLS

1 Cucumber

2 Bell Peppers

2 Carrots

1/2 Red cabbage

4 Leaves of butter head or romaine lettuce

Optional: Avocado, and or mango

1 package of rice wrappers

DIRECTIONS

Cut the vegetables into long strips. Use a peeler to make long thin ribbons with the carrots. Fill a large dinner plate with water. Place one rice wrapper in the water and let soak for about 20 seconds until softened. Remove the rice wrapper and place on cutting board and fill with vegetables. Fold the ends of the wrapper in and roll into a tiny burrito shape. Do not try to unroll once the rice wrapper wraps around itself it will cling tight. Refrigerate up to one day and serve with peanut dipping sauce.

Chipotle Peanut Butter

Handsome Carver’s personal favorite out of all of his creations. This is savory peanut butter, which means you can use it in many ways you are used to using peanut butter, like on crackers or toast. But you can also use it in ways you may not be used to, like mixing into stir fries, as a base for a peanut sauce, or on sandwiches.

Ingredients: Organic peanuts, ground chipotle, smoked paprika, sea salt, white pepper, onion powder
